Jam role, so delicious and so simple to do! And the best part is that you can almost fill it with whatever you want. This one has a bit of gingerbread touch. Spiced with cinnamon, cloves and ginger.
100-150 gram butter
2/3 cup sugar
2 teaspoon baking powder
1/2 cup flour
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon ginger
1 cup lingonberries (or other jam/berries)
oven 175 C, 20 min
Beat eggs and sugar white and fluffy.
Stir in flour, melted butter, baking powder, cinnamon,cloves and ginger.
Put it all in a pan, cook in oven for ca 20 min.
When finished flip the cake upside down to another baking paper. Damp the paper to make it come off the cake easier (see picture).
Spread jam and berries over the cake and role it. Let it cool down before serving it with a cup of coffee!
