Besides being a mouth melting cookie, jitterbug is a fantastic fun dance more known as lindy-hop. And I’m not lying if I say this cookie will probably make you dance.
1 1/3 cup flour
200 gram butter
1 egg yolk
2 egg whites
4 tablespoons sugar
1 Mix flour, sugar, butter and egg yolk with your hands to a dough.
2 Leave in fridge for 30 minutes.
3 Prepare the filling by beating egg whites and sugar to a white fluffy meringue mix.
4 Roll out the dough to a rectangle and spread the meringue filling all over.
5 Fold n the edges on one of the longer sides of the rectangle and roll it to a big roll. Slice up pieces (1 cm) and put it on a baking tray.
6 Cook in oven 175 degrees for 10-15 minutes. When finished cool them down on a wire rack , while you make some coffee for your fika!
